Coronation chickpea is a popular Vegan filling for a ciabatta roll or a panini, and now you can try making it for yourself at home.
Coronation Chickpea recipe:
Makes enough filing for 2 or 3 sandwiches
Ingredients:
One 240g tin of chickpeas (drained)
50g Vegan mayo
1tsp Madras curry powder
A handful of sultanas
1 heaped tbsp mango chutney
2 spring onions, finely chopped
salt and pepper to season if desired
Method:
Mix everything apart from the chickpeas in a suitable mixing bowl until fully combined
Add half of the chickpeas straight to the mix and stir in
Blend the other half of the chickpeas and stir them into the mix until well combined
Don't fancy making this yourself? Come and try it at the Flint Barn Cafe, and we'll make it for you!
Ele's top tip:
This coronation chickpea recipe also works really well as a jacket potato topping. That's what I do at home.
